SYSCO KITCHEN: Kanak Attack Hawaiian Style Teriyaki Burger

Born and raised on the island of Oahu, Executive Chef Michael Mohica is no stranger to the colorful tastes of the islands.  After graduation from Boise State University’s Culinary Arts program, Chef Mike made it his mission to bring mouthwatering authentic Hawaiian cuisine to the Treasure Valley.

Kanak Attack’s unique flavors of Hawaii and Asia, true Aloha spirit and amazing customer service have set them apart and contributed to their success.  Though they feature an extensive menu, Kanak Attack will even provide custom dishes or work with family recipes at their client’s request.  However, Kanak Attack is best known for their traditional Kalua Pig and whole roasted pigs.  Kalua Pig is a shredded pork made from a whole pig that is smoked for 18 hours until the meat falls off the bone.  Whole roasted pigs are a hit at luaus, weddings, and other events.

 

Teri Burger

Patties:

1 lb          ground beef

1 T.          garlic, chopped

1 T.          onion, minced

2 T.          green onion, chopped

2 t.           Worcestershire sauce

1               egg

1 t.           Teriyaki sauce

S&P

Directions: Mix together and form patties.

Teriyaki Sauce:

1 c.          Soy sauce

¾ c.          white sugar

1 t.           grated ginger

1 t.           garlic, minced

1 T.          green onion, chopped

2 T.          corn starch

Directions: Mix together (use both in the patty recipe and as a condiment)

Pineapple Aoli:

2 T.          pineapple, chopped

1 c.          Mayonnaise

2 T.          Apple Cider Vinegar

1 T.          dried dill

1 t.           Worcestershire sauce

1               head roasted garlic

S & P

Directions: Blend in food processor.

 

Build the burger:

·       Grill burger patties.

·       Spread Pineapple Aoli onto buns.

·       Place patties onto bun, top with Teriyaki sauce.

·       Add lettuce onions and tomato.
